Gluten Free Foodie Fridays | Bing Cherry Clafoutis

Well if you follow me on Instagram {@thecuratedhouse}, you’ll know that our backyard cherry tree has offered up an abundant harvest this year. We picked two massive bowls of ruby red gorgeousness the other day and we still haven’t made a dent in the fruit on our tree! If only it would stop raining, we could gather the rest!

Last year for cherry season I was inspired to make Braised Lamb with Bing Cherry Sauce as well as this gorgeous summer salad: Chèvre Chaud with Fennel and Bing Cherries. This year I decided to start with dessert and make something I’ve never made before: Cherry Clafoutis.

A classic French Clafoutis is typically more like a custard than my version, but given that I’m allergic to eggs, custard is…well…tricky. So while there is still a creamy edge to it thanks to the heavy cream, my Clafoutis is more flan-esque.

I started by sorting and bathing our cherry harvest in a 10 minute soak of 10 parts water to one part apple cider vinegar. I did this because, with all of the moisture we’ve had {read: too much rain!}, the cherries are prone to going mouldy quickly.

I then laid them all out on tea towels to dry. You may be wondering if the apple cider vinegar leaves a film or taste on the cherries, and the answer is not a trace! Just mould-free fruit that will last longer in the fridge.

Next step? Pit the cherries I need for the recipe.

I then cut the cherries in half and macerated them in brandy and coconut sugar for just over an hour {fear not: quantities will all be revealed in the recipe below}.

I used white chia for binding in this recipe, and quickly ground it to a fine flour-like texture in my newly acquired and much loved Blendtech. {They are as cheap as it gets at Costco right now!}

The only other photo-worthy step was the gorgeous Tahitian vanilla bean, which I cut in half, split open and scraped to harvest all the rich vanilla flavour encapsulated within. So aromatic. So delicious!

And now, here’s the recipe! I do hope you’ll try it and let me know what you think.

INGREDIENTS:

3 cups Bing cherries, pitted and halved
1/4 c. brandy
1/2 c. coconut sugar

* Macerate the above ingredients for 1hr+ *

4 tbsp white chia, finely ground
4 tbsp boiling water
1 1/2 c. whipping cream
1/2 c. coconut sugar
1/2 c. maple syrup
1/2 vanilla bean, scraped
Tiny pinch of good sea salt {I used Maldon}
1/2 c. Coconut flour

METHOD:

Once you have your cherries pitted, halved and macerating with the brandy and coconut sugar, set the oven to 350°F. In a stand mixer, combine chia and boiling water. Allow to set for a couple of minutes and gently add in whipping cream, coconut sugar, maple syrup, vanilla bean, salt and coconut flour. Mix until well combined but not at too high a speed so as not to turn the whipping cream into butter.

Drain off the liquid from the cherries. Butter the bottom and sides of a flan pan {mine was a bit too big for this recipe at 14″ diameter. 9-12″ would work nicely}. Line the bottom of the flan dish with the cherries and then pour the batter over top to cover. If your flan pan has a separate base {as does mine}, you will want to place a cookie sheet underneath it in the oven to prevent cherry juices from running onto the bottom of your oven and burning.

Bake for 45 minutes or until a knife comes out clean. Set aside to cool.

Serve with a dollop of maple syrup whipped cream and enjoy with good company! {Insider tip: the caramelized edges are particularly delectable, so even though I served it in bowls and it looks like a crumble, I cut the servings in pie shaped pieces to ensure that everyone got some of the caramelized golden deliciousness.}

An Update on Project Ugly Duckling + an Intro to Project Debonaire Young Sir

I don’t know if I can get an “amen” on this one from any of my fellow migraine sufferers, but this weather has been giving me a run for my money lately! At least I think it’s the weather. Apparently we are in for another week of rain here in Ontario, which is not exactly the best news I’ve heard all year. Ugh. These are the weeks I start packing my bags and buying us all one-way tickets to California. You’d come with me, right? At least, those of you who aren’t there already!

Well in the midst of the gloom and glum of overcast skies and endless wet, good news keeps arriving in inconspicuous cardboard boxes via my friendly neighbourhood FedEx delivery man. Firstly, the wallpaper has arrived for the bathroom!! The rolls are actually bookmatched to one another so that the pattern is wider than your typical wallpaper and feels more like a mural. Decadent! I. Can’t. Wait. To. Get. This. Fornasetti. Gorgeousness. Installed. In. My. Home! Colour me giddy.

Another lovely delivery to arrive by post this week are my sconces for the bathroom. I wanted something simple, slightly retro and even nautical/industrial in feel while still modern and fresh. I’m really happy with the look {and the deal} of what I found. I ordered two of these Possini sconces from Lamps Plus which arrived lickety-split. No fuss. No muss. Very happy.

OK, it is now confession time. Yes, I wanted to go with satin brass on all of the fixtures in this bathroom. Naturalment. But I had already purchased the towel bars and other accessories in chrome a year or more ago when we renovated the other bathroom, thinking I would want all the bathrooms in the house to flow. While on the one hand I’m sad that my need for brass cannot be fulfilled in this space, on the other hand, the chrome faucet I’ve order was a fraction of the cost it would have been in satin brass. And chrome never dates. So I am content.

I’m also excited, because the hallway that connects to this bathroom {the one that is now adorned with that gorgeous chevron floor} also connects to a bedroom {formerly my design office, which I’ve moved} and we have decided to transform it into Noah’s new “suite.” He’s a rather sophisticated little monsieur, so I’ve decided to call this Project Debonaire Young Sir.

I’m basing the inspiration very loosely on one of my favourite bedrooms by one of my favourite fellow designers: Thomas Smythe. Tommy Smythe has officially got debonaire down to an art form.

Much will be different about our space, of course, as Noah wants cream walls rather than charcoal and mama can’t afford to get her sweet little prince a Louis Phillipe commode just yet…but, the mix of pattern, the gallery wall, the nod to colonialism…well, I hope to include a dash of all that goodness with a little whimsy thrown in for good measure!

Still waiting on the mudder/taper to get in here and finish the walls so we can get the baseboards, crown and trim up. It’s a good shot to the arm to have fun things arriving in boxes right now as it makes me feel like progress is still being made, even if the rooms are kind of at a stand-still right now.

It’s so hard to wait when the Ugly Duckling is showing signs of her inner swan emerging! But many years in this business have taught me that it will be worth the wait. Sigh.

Design Find | Eskayel

I recently stumbled upon a Brooklyn-based design studio that has me seriously swooning. Their aesthetic is both fresh and unexpected – edgy and sexy yet soft with a modern classic sensibility. I think it is their uniquely artistic, hand-painted patterns that have me most a-flutter. Add to that their environmentally responsible approach to interior surface design and I’m hooked. From fabrics to wallpaper and rugs to a collaborative furniture collection with ABC Carpet + Home, ESKAYEL totally has my number. Just take a peek at some of their designs. {*bites palm with excitement*}

It’s a watercolour, ink-blot damask wallpaper with allusions to Ikat patterns! Could it be any more GORGeous? I think not.

So delicate, so modern. One could transpose a thousand dreams onto these patterns, like finding shapes in the clouds on a perfect summer’s day.

The furniture collection in collaboration with ABC Carpet + Home is totally boho-modern chic.

How fabulous to infuse a space with some carefree, artistic brushstrokes with these incredible ottomans? Love.

By reproducing their hand painted patterns locally in the northeastern United States on natural and recycled grounds, Eskayel’s made to order fabrics and wall-coverings are as eco friendly as they are visually inspiring. I think their rug collection may have wowed me the most. Crafted of 100% silk, these rugs are nothing short of spectacular.

I seriously just want to roll around on the rug pictured above. Not sure what that says about what I’m reading into the ink blot for this one…or about me in general!

Eskayel was founded in 2008 by artist and designer Shanan Campanaro. The Central St Martin’s graduate has worked in both graphic design and fashion, but has always been interested in interiors believing that the atmosphere and vibe of a room can transform ones mood. Having lived in many different spaces and more than a few countries before the age of 30, the importance of building an environment of true self expression and comfort in each of her homes became a huge priority and obsession.

Campanaro began by turning that passion into wallpaper and now with her partner, Nick Chacona, Eskayel continues to bring to the market innovative products of the highest quality that are luxurious, natural and beautiful.
